Build up of filth and food residue: York County Restaurant Inspections - pennlive.com

The following York County restaurants were found to have violated Pennsylvania’s health and safety regulations during inspections between Feb. 14-20.

Inspections are overseen by the Department of Agriculture. The department notes that in many cases violations are corrected by the restaurant before inspectors leave.

ROYAL FARMS #118

101 Carlisle St., Hanover

Date: Feb. 19, 2021

--Outside of chicken hot box observed to be dirty and is in need of cleaning.

--Ceiling above chicken prep and front prep area, and signs above chicken hot box observed with an accumulation of static dust and are in need of cleaning.

--Torn rubber door gaskets observed on the deli cooling unit located near the slicers.

--Metal plate on interior of frozen walk-in cooler door is not attached to the door frame.

--Underside of floor mixer motorhouse, a food contact surface, was observed to have food residue and was not clean to sight and touch.

--Seafood area - in-use cutting board is deeply scored and no longer easily cleanable.

--Mops are not being hung to air dry.

--Observed clean food utensils in deli area, stored uncovered, not inverted, exposed to possible contamination by contact with employee clothing and/or hand contact with food contact portion when retrieved for use.

--The hand-wash sink in the deli area was blocked by carts and not accessible at all times for employee use. Hand-wash sink in the fryer area was blocked by a hose and not easily accessible at all times for employee use.

--Under shelving and in corners of the walk-in freezer is extremely dirty, dusty, and in need of cleaning.

--Bakery floor under shelving and refrigerator is dirty and in need of cleaning.

--Ceiling air return grates in the deli area have heavy accumulation of static dust. Accumulation of static dust observed on walls inside the chicken breading cooler.

--Manual ware-washing equipment located in the deli observed with build up of filth and food residue and not cleaned before use, and frequently throughout the day.

--Caputo cheese case, a non-food contact surface not cleaned at a frequency to preclude accumulation of food spillage, dirt and soil.

RED ROSE RESTAURANT AND LOUNGE

--Floor in walk-in refrigerator observed to be rusted and no longer in good repair.

--Ceiling tile missing in the pizza box storage area, and needs replaced.

--Observed hole in ceiling above prep table.

--Heat lamp, was observed to have food residue and was not clean to sight and touch. Corrected.

--Observed water leaking between drainboard and dishwasher connection.

--Shelves observed to be lined with paper material, not a smooth and easily cleanable material.

--Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was zero ppm, and not 50-100 ppm as required. Facility able to use three-compartment sink for sanitizing equipment until dishwasher is fixed. Corrected.

WOOD FIRE ITALIAN GRILL

--Water temperature measuring device on the ware-washing machine is not calibrated and/or functioning properly.

--The quaternary ammonia concentration in the sanitizing solution of the wiping cloth bucket was zero ppm, rather than 150-400 ppm as stated on the manufacturers use directions.

--Open employee beverage (screw cap variety) observed on a preparation table in the cooks line.

--Both upright freezers on the cooks line have extremely heavy frozen condensate build up. Walk-in freezer door has thick frozen condensate where door gasket should be.

--Loose or broken door hinges observed on both upright freezers in the kitchen area.

--Food slicer, underside of mixer motor house, and gun style soda dispenser food contact surfaces, were observed to have food residue and were not clean to sight and touch.

--Ceiling tiles missing in the food preparation area, and need replaced.

--Observed cardboard case of lettuce stored directly on the floor inside the walk-in cooler, rather than six inches off of the floor as required.

--Mechanical ware-washing equipment had old food and lime buildup observed inside.

--Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in cooks line salad bar equipment.

--Plastic utensils used for cooking are deformed and misshapen from heat, and are not durable under normal use in the food facility.

--Observed ice cream well and top of cooling unit supporting flat grill in cooks line area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces.

--Cleaned and sanitized utensils located in dish machine area, are stored with food contact surfaces/food or lip area exposed to hand contact when retrieved by food employees.

--Food facility is using Smartpower Cleaner Sanitizer at an extremely high concentration of 1100/12,000 rather than 700/1875 per manufacture instruction for use on food contact surfaces.
